Happy Easter! Have some cake

Chocolate fudge cake. This is version 2.

Well, all right...


Not my finest hour in the kitchen; I think I got the quantities wrong for the size of cake tin I was using and most of it ended up all over the bottom of the oven. Still, at least someone was happy to lick the spoons for a second time.

Doing What I'm Told


Don't you sometimes envy childen their certainty? My almost-3-year-old has very clear ideas about what constitutes a birthday party:
  • balloons (with ribbon)
  • a pretty party dress
  • presents
  • candles, on a chocolate birthday cake with pink icing
  • a birthday girl ("That's me, " adds M, just in case there was any doubt)

I've done my best to oblige. The cupcakes are orange flower and vanilla with a real strawberry frosting - something for the grownups! If you are the praying kind, please pray for good weather in the South of England tomorrow.

I thought I'd share this recipe for Coconut and Lime Cake by Delia Smith. It really wasn't difficult and is every bit as delicious as it looks (and I was very pleased that it looked exactly the same as the picture in the book!) Enjoy!
